Tomato Basil Soup - the best recipe EVER ❤
There is nothing better than a warm bowl of soup when its cold outside! To help keep you warm, we are sharing with you our favorite tomato basil soup recipe ever... its creamy... its savoury... it will make you salivate while you are having it... and most importantly it will keep you warm, full and happy. 😍
5 fresh tomatoes
1 can peeled plum tomatoes
4-5 tablespoons tomato paste
5-6 leaves fresh basil (or few tsp dried)
1/2 cup heavy cream
3 tablespoons butter
salt and pepper (to taste)
1. Chop tomatoes and add to deep pot along with canned tomatoes, basil and tomato paste. Cover pot and let simmer on low heat for at least 1 hour (the longer the better).
2. Once the tomatoes have simmered for an hour and the chopped tomatoes are soft, add heavy cream. Using hand blender, puree the whole mixture for a few minutes till smooth.
3. Add butter and season with around 2 tablespoons of salt and 1 tablespoon of pepper. Taste to adjust.
