"Skinny" Banana Bread

What do you do with overly ripe bananas... banana bread ofcourse! For those of you on a diet or trying to stay "healthy"... don't fret, we've discovered the most heavenly recipe for a banana bread with only 137 calories per slice (woohoo!). Our family will attest that it tastes just as great as the regular variety, just with very little fat. So whether you want something healthy to put in your kids lunch box, a no-guilt treat, or just something sweet, you will love this.



Ingredients:
  • 3 ripe bananas

  • 1.5 cups all-purpose flour (or wheat flour)

  • 3 tablespoons brown sugar

  • 2 tablespoons white sugar

  • 1 large egg

  • 1 tablespoon vanilla extract

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 tablespoons melted butter or oil

Instructions:
  1. Preheat oven to 180C (bake) and grease a loaf pan or small-medium sized pan (I used a 20x15cm pyrex)

  2. Peel bananas and mash in a large bowl

  3. Add all ingredients and mix well (if you want to get really fancy, mix the wet ingredients separately from the dry and then pour the dry in... but we put everything together in one go and it worked just fine).

  4. Pour into the pan and place into the hot oven for 30-45 minutes. At 25 minutes, try inserting a toothpick into the middle. If it comes out clean its ready to come out, if not put back in for another 5 minutes and try again. The trick to a moist banana bread is taking it out of the oven at the right time!
