When life gives you peaches, definitely make peach cobbler! This ooey-gooey southern specialty is best served warm and with a scoop of vanilla ice cream.
1 kg ripe peaches (or 1 can of peaches if off season)
1 cup flour
1/2 cup brown sugar
1 cup white sugar
2 tsp baking powder
1 tsp salt
1 tsp vanilla extract
3/4 cup milk
1/2 cup melted butter
Preheat oven to 220C and grease a baking pan
Peel peaches and remove the pits. Slice into pieces and put in a bowl. Add 1/2 cup of sugar and mix well. (If using can, skip this step)
In a large bowl, add flour, 1/2 cup brown sugar, 1/2 cup white sugar, baking powder, and salt. Add vanilla, milk and melted butter and whisk until smooth.
Pour batter into greased baking pan and layer the peaches on top (including all the liquid).
Bake in oven for 30 minutes or until golden. Remove from heat and let sit for 5-10 minutes before eating.
